From the tapping to the tap it is often a few hundred metres of pipe. In the city it is kilometres through a network.
You turn on the tap, and out comes water that emerges from the mountain a few hundred metres further up. That is one of the loveliest differences between a hut and a flat in the city.
Most huts at higher altitudes have their own spring. What sits in the slope for it, no guest ever sees: perforated seepage pipes lie exactly in the water-bearing layer, above them coarse drainage gravel, above that a membrane and a thick layer of clay sealing from above. A ring drain diverts the slope water past, behind it come the collection shaft, overflow and vent.
The point of it all is simple and rather elegant: the water is captured at exactly the moment it emerges from the mountain – before it runs across the meadow and picks up everything lying there. That is why it arrives at your tap clean.
Such tappings last decades if someone looks after them. And that is exactly what the people who own the huts do: after the meltwater in spring and after every major thunderstorm, someone drives or walks up and checks that everything is clear. That is as much part of the Alm year as mending fences.
You are not imagining it. On its way through the mountain, water picks up dissolved minerals, and which ones depends on the rock. On limestone and dolomite it becomes harder and tastes rounder; on primary rock it stays soft and seems almost neutral. That is why the water in the Karwendel tastes different from the Ötztal – and both different from the city mains, which mix water from several sources.

Spring water arrives at about four to eight degrees. That is why the hut needs no fridge for the drinks – the fountain is enough.
Every spring tastes a little different. Ask your host where theirs comes from – most enjoy talking about it.
And the fountain outside the door usually runs continuously. That is not waste, but intention: a spring flows anyway, and standing water in the pipe would be the bigger problem. The overflow goes back into the slope.
Many huts today have a UV unit in the line. The water passes a UV lamp, done – no chlorine, no taste, no effort for you. Before it usually sits a filter that holds back suspended matter. Together that is the state of the art, and it costs about as much as a good fridge.
The reason lies in the nature of the thing: after heavy rain or during snowmelt the flow rises, and a spring can then become briefly cloudy – especially in limestone areas, where the water travels faster through fissures. That is known, that is planned for, and that is what the unit is there for.
If your host tells you they open the tapping in spring and drain the pipes in autumn: that is not small talk. That is the work that ensures something comes out of the tap up at your place.
A spring is not a pipe with pressure behind it – it gives what the mountain gives. In wet years that is plenty, in dry ones it gets scarcer. Most huts have storage tanks for this, and they normally last without any problem.
In exceptional years it gets sporting. At the end of July 2026, the Leopold-Happisch-Haus in the Tennengebirge at 1,914 metres had to close because its spring had run dry – the operators flew bottled drinking water up by helicopter and are now planning a larger storage tank plus a second tapping. Such cases are rare, but they show the effort hut keepers put into maintaining the supply.

The water you drink at the hut has a shorter journey behind it than almost anything else you drink. It comes from the mountain you are standing on, and it tastes like it. The bottle you usually lug along, you can fill at the fountain.
If a note hangs above the shower somewhere, it has a practical reason – then showering briefly really helps, and you won't notice any difference. Where none hangs, you don't need to think about it either.
And if you happen to be on an Alm: the fountain trough outside the hut is the best cooling there is. Beer in, go for a hike, come back.
Yes. What comes out of the tap is drinking water – nothing changes about that just because the spring is closer than in the city. Only where “no drinking water” is expressly stated is it non-potable water from a cistern, for example for watering the garden.

Because of the dissolved minerals, and they come from the rock. Limestone makes it harder and rounder, primary rock softer. Add the temperature: spring water is four to eight degrees, and cold water tastes fresher.
As a rule, no more than at home. If a house runs scarcer in a dry summer, the host says so – and then it is quite enough to shower briefly instead of long. With us, the supply is already in the description.
