Graukäsesuppe is a real piece of Tyrolean Alm cooking: from the lean, tangy Tiroler Graukäse – a sour milk cheese made from the skimmed milk left over from butter making – mountain farming families have been cooking a creamy, warming soup for generations. It tastes of the Alm, of handcraft and of honest cooking.

What you need

Ingredients for 2 people:

  • 150 g Tiroler Graukäse
  • 1 onion
  • 20 g butter
  • 1 tbsp flour
  • 500 ml beef or vegetable stock
  • 100 ml cream or milk
  • Salt, pepper, caraway
  • Chives
  • toasted dark rye bread for serving

How it's done

  1. Finely dice the onion and sweat it in the butter until translucent.
  2. Dust the flour over it and briefly toast it.
  3. Pour in the stock and stir until smooth.
  4. Stir in the finely cut Graukäse and let it melt.
  5. Add the cream and season with salt, pepper and caraway.
  6. Purée the soup so it turns nice and creamy, and serve it with chives and toasted dark rye bread.
