This is autumn at its most delicious: a sweet relative of the Kaiserschmarrn with caramelised pears from the land of the Most pears.

The Birnenschmarrn is an autumnal sweet dish from the Mostviertel in Lower Austria – the land of Most pears and blossoming orchards. It is a delicious relative of the Kaiserschmarrn, only with caramelised pears from the region: simple, honest and straight from the tree.

How it's done

  1. Stir the eggs, flour, milk, sugar and a pinch of salt into a smooth batter. Tip: if you beat the egg whites separately until stiff first, your Schmarrn turns out extra fluffy.
  2. Cut the pears into wedges and fry them in butter until golden brown.
  3. Pour the batter over the pears and let it set over medium heat.
  4. Tear the Schmarrn into pieces with two forks and let it caramelise lightly for a moment.
  5. Dust it with icing sugar and serve it with Most pears or a small compote.
