Schinkenfleckerl
Schinkenfleckerl are a simple classic of Austrian cooking: small pasta squares, ham and an airy mixture of eggs and sour cream – baked golden in the oven. Once a typical leftover meal, today a hut dish that truly anyone can make.
What you need
Ingredients for 2 people:
- 200 g Fleckerl (or wide ribbon pasta)
- 150 g ham, diced
- 2 eggs
- 150 g sour cream
- 30 g butter
- Salt, pepper
- some chives
How it's done
- Cook the Fleckerl in salted water until al dente and drain them.
- Fry the diced ham in the butter.
- Whisk the eggs with sour cream, salt and pepper.
- Mix the pasta and ham into the egg mixture and put everything into a buttered dish.
- Bake the Fleckerl in the oven until golden and sprinkle them with fresh chives.
