Speck-Jause
The Brettljause simply belongs in Tyrol. After work on the Alm or after a hike, everyone sits down together and a board with Speck, cheese and bread comes to the table – that is the Marende. Over the years, the simple snack board has become a cherished tradition to which every family adds its own favourite pieces.
What you need
Ingredients for 2 people:
- 150 g Tiroler Speck
- 2 Kaminwurzen (or other smoked sausages)
- 150 g Tiroler Bergkäse
- 4 slices of Bauernbrot
- 2 tbsp butter
- 2 Essiggurkerl (pickled gherkins)
- freshly grated Kren (horseradish)
- a few radishes, as you like
How it's done
- Cut the Speck into fine, thin slices – best with a sharp knife straight from the piece.
- Cut the Bergkäse into bite-sized pieces or wedges.
- Arrange the Speck, cheese and Kaminwurzen on a board. In between go the Essiggurkerl and – if you like – a few radishes.
- Add the Bauernbrot and the butter.
- Serve the Brettljause with freshly grated Kren. A glass of Most or a cool beer goes well with it.
