Speck-Jause

The classic Tyrolean Brettljause: Speck, Bergkäse, Kaminwurzen and Bauernbrot – the Marende (snack) after the hike.

The Brettljause simply belongs in Tyrol. After work on the Alm or after a hike, everyone sits down together and a board with Speck, cheese and bread comes to the table – that is the Marende. Over the years, the simple snack board has become a cherished tradition to which every family adds its own favourite pieces.

How it's done

  1. Cut the Speck into fine, thin slices – best with a sharp knife straight from the piece.
  2. Cut the Bergkäse into bite-sized pieces or wedges.
  3. Arrange the Speck, cheese and Kaminwurzen on a board. In between go the Essiggurkerl and – if you like – a few radishes.
  4. Add the Bauernbrot and the butter.
  5. Serve the Brettljause with freshly grated Kren. A glass of Most or a cool beer goes well with it.
